In whole White Snapper look for lustrous skin, firm flesh, and a pleasant, fresh sea smell. In White Snapper fillets, look for yellowish-white, firm, lustrous, moist flesh without any brown markings or oozing water and with a pleasant fresh sea smell. Seabream can occasionally have a distinct aroma of iodine.
White snapper is one kind of reef fish. They live amongst or in close relation to coral reefs. White snapper looks a lot like snappers and is closely related. White snapper is available year-round.
White snapper are superior table fishes, especially when baked whole (gilled and gutted). They are extremely popular throughout the Indo -West Pacific region. White snapper has white meat. Flesh is moist, firm, sweet to mid taste and flavorsome. It’s easily removed from the frame after baking.
White snapper has large flakes and delicate flavor are all appealing. While emperor doesn’t have quite as strong a flavor as snappers, it can be cooked in the same way.
Cooked whole white snapper by baking (try stuffing with herbs and nuts), steaming, poaching or deep frying, emperors are a stunning finfish to display. They are also ideal in fillet form for frying, grilling, barbecuing, or steaming.
The skeleton and head white snapper have substantial flavour for use in stocks and as a base for sauces, soups, and bouillabaisse.
