Red Mullet / Goat fish is one of the most commercially important species of countries. Red mullet can be found in tropical and warm seas over the world, most of the year. In Vietnam, there are two related species of fish: there is the common red mullet with a pinkish flesh and striped, red mullet with racing stripes. Red Mullet is found in coastal waters with a muddy substrate. In the summer, this species can be found in all three regions of Vietnam, i.e., North, Central and South. In the autumn, it migrates to the South. In the winter, it inhabits mainly in the South. The best time to enjoy red mullet is between August and October.
An infallible guide to freshness is the color: if this begins to fade, the fish is going off. The flesh should be quite firm, the body almost rigid, the skintight and the eyes prominent and clear. Red mullet is sold whole and in fillets, both fresh and frozen. Whole fish are usually sold un-prepared.

Red mullet is such a flavourful fish in part due to its high fat content. It has a creamy texture similar to chicken liver, it is usually left intact when the fish is gutted. Red mullet fillets require pin-boning, but the fine skin, once scaled, is usually left attached.
Red Mullet suits simple cooking methods particularly well – just make sure not to overcook the fish as the flesh will go from deliciously moist to dry. Red mullet is most often pan-fried, grilled or steamed; the bones make excellent stock :
- Pan-fry fillet: put olive oil in the pan and heat it. Then comes the time to put in the filleted fish and pan-fry it. Enjoy with sauce or a slice of lemon.
- Roast whole Red Mullet fish by sprinkling with herbs and dousing in oil before cooking for a few minutes in a hot oven, en papillote (in a bag) or on the barbecue. The skin of the red mullet is a particular draw – correct cooking will produce crisp, salty, unctuous skin that describes as ‘fish crackling’.
