KEO FISH / CHIRING
Keofish or Goby fish or “Cá Kèo” is one of the Vietnamese favourite fish, scientifically known as (Pseudapocryptes elongatus ) . It also called by Chiring / Chewa bele / চিরিং / চেওয়া বেলে / ডালি চেওয়া in Bengali.
Keo fish is a type of goby fish . In local cannal and rivers, Keo fish is so abundant that the fish heads emerging from the water look like dense black spots on the surface of water .
In Vietnam, Keofish (Pseudapocryptes elongatus ) is one of the most farmed types of freshwater fish and is found mostly in Mekong provinces. Keofish / Chiring is widely cultivated and has a high growth rate, allowing for consistent availability throughout the year.. Live Keofish mainly sold to local restaurant, food court,... , thus high prices in the market.
However, the abuse of antibiotics such as Malachite Green, Leucomalachite , … in the farming process and high rasing density causes the risk of antibiotic residues in fish flesh. We must control antibiotics residue with pre-harvest lab inspections.
In the end of the monsoons, we also have a few quantity of natural Keofish / Chiring / Chewa bele / চিরিং.

Keofish / Goby fish / Chiring (Pseudapocryptes elongatus ) only has tiny-scales with brown-black skin. Keo fish do not have anterior dorsal fins, they don’t have little bones. The size of about 2 fingers and about 10-15 cm long when it is mature.
Keofish meat is delicious — being soft in texture, a bit garlicky meaty and having a unique aroma of a live fish.

Keo Fish should be eaten a few minutes after being put in the broth because this type of fish is small and long and therefore it is cooked very quickly.
