Silver Croaker / White Croaker ( Pennahia argentata ), also known as Croaker drum / Shiroguchi / 보구치 / 帕头 / 白口 /白姑魚/ Cá Đù / Đù Sóc can be found in both freshwater and saltwater environments, with different species being native to various regions worldwide. They are characterized by their elongated bodies and a distinctive loud croaking sound produced by the males during breeding season, hence the name "croaker."
Croakers are an abundant commercial fish species of China, Japan and Korea. Croakers are generally marketed fresh, frozen, but also sold salted or dried.

One of the reasons why Silver Croaker / Drum is so popular is due to its mild and delicate flavor. Its white flesh has a slightly sweet taste, with a texture that is both firm and flaky. This makes it versatile and suitable for different cooking methods, as it can be easily grilled, baked, fried, steamed or even used in soups and stews.
Like most fish, croakers make for good eats when fried. It’s often breaded or dusted with cornmeal or flour and pan-fried, but baking croakers helps to bring out its natural flavor. One of my favorite : dip a dressed, scaled Croaker in water, milk, egg or a combination of the three, then roll in corn flour and cook in hot grease.
Or simply sprinkle the fillets with salt, pepper, lemon juice and bake 10 minutes for every inch of fish. When croakers start to flake easily, you’re ready to dig in. The meaty fish also can be steamed whole cleaned croaker with soya sauce, ginger, green onion, peper.
